Hi Ben,
Take a look at the Chesapeake series of kayaks from CLC. They are available in the standard version [high volume] and the LT versions [less volume] in different lengths.
The comments that I have read describe this design as being fast and stable.
If you do a bit of searching in these archives you will find lots of info.
I am just about to start construction of the 17 LT as a fishing kayak.
