The pot life of "Ding All" epoxy is at least 45 minutes at the conditions I note below - It might be longer, but I was done by then. Mix one minute, let sit one minute, mix one minute more. That epoxy (perhaps all others as well, I just don't have the experience) was so workable for so long that I can't believe anybody could screw it up! It was 81F and 72%RH in my garage when I mixed and applied it - - It is important that you spill it on the hull ASAP instead of letting it sit in the cup, however. I spilled 3/4 of it on the hull, and kept the rest in reserve. Spillover from the sheer as I spread the epoxy was simply collected back into the pouring cup, and re-poured back onto drier areas of the hull without regard for the non-existent bubbles-in-previously-spread-epoxy problem.

Congrats on your decision to go stapleless - - It is pretty easy, it's very rewarding, and you don't have to make excuses for any visible holes/staple dings. But be advised that several posters on this board create fine staple constructed craft and those craft look pretty darn nice . . .
