I build in the micro-environment of my apartment, so unfortunately I can't help you with the humidity question, but maybe I can help with the hatches (portholes are those little round windows on the sides of ships -- you could install some to be creative...)
Great River Outfitters sells the rubber Tupperware-style hatches made by VCP (Valley Canoe Products) that are supposed to be the best in the business. They cost ~$150 for a pair, one 7.5" round and one 16"x9" oval, and can be found on the webside listed below. They aren't pictured, but there is a price list and you can get a catalog. These, along with most other hatches, will require custom mounting, so we need moe information on your kayak to be able to help you there.
