The two woods have very similar characteristics, but the African ribbon stripe mahogany has a more interesting grain than the Honduras mahogany. Edensaw Lumber recomended the African ribbon stripe mahogany (not plywood) for use as accents on a strip kayak.
The 1/8" should work well. I used 1/8" mahogany plywood and multiple layers of 3.25 oz. satin glass on the plywood Walrus with excellent results. It would have been nice to have 4 x 10 sheets.
