A neat little thing I saw was a fellow took one of those very loud, high pitched personal safety alarms that people use while walking or running and modified it to use on his kayak while it is on his car.
Basically, if someone lifts his kayak off the car without disarming it first all hell breaks loose. I would make it even more useful by making it so that if someone undoes a tie down it will go off.
