I hate to make this suggestion but GET OUT YOUR Home Owners Insurance Policy and READ IT.
Most home owners policies out there limit water craft to $1000 for all "watercraft" in the household not per boat.

: Good day! We all apreciate how much time is spent building our little craft,
: therefore I'd like to purchase some insurance or make certain my
: homeowners' insurance covers such a loss. Any ideas as to how much a strip
: kayak is worth? Not a fun thing to think about until it happens to you.
: Last November after having just completed a 14 hour overtime shift I got
: to the parking lot soon enough to see my truck and camper drive down the
: street without me. My truck was recovered days later with not much left on
: it and my camper was gone. It had taken me several hundred hours to build
: and someone thought it nice enough to steal. As I had only a few pieces of
: molding to attach, I had not taken it in to be insured yet. Faith in human
: nature cost me ten grand. Sorry about the lenghty sob story, just trying
: to hit home on a point. And yes, grown men do cry!
