kayak design advise needed

I have been kayaking for 5 years now and have built both stitch and strip boats. My problem is designing a two person kayak for my wife and I now that she wants to join me.The catch...she weighs 350#,and I 170#.The thought is to copy the Perception Sanibel at 15 feet and increase the width to 32 inches. The other change is to move the open cockpit foward 18 inches to put the cg in the center of the kayak. The construction would be 1/4 inch stitch. With me so far to the front would there be problems with handling?I will install a rudder. Are there problems I am overlooking?I have never paddled a double or a large kayak.I build them only as wide as me and light for speed.Any insight would help as the wood dust will fly on the 24th.thanks....phil
