I'm making a Ches 14 (from CLC). Their instructions state that you should cover EVERYTHING (inside and out) with a thin coat of epoxy. The idea is to protect the wood from the water. What you get is a "plastic covered" wooden boat. You don't need much epoxy as you're just trying to coat the wood, not provide strength. Think of it as a sealer, not as a stuctural part of the boat.
