Two coats now and touchup on scratches as needed. Next year you can lightly sand and put on another coat. And the year after that you can lightly sand and put on the 4th coat. After that you can probably tell at an annual inspection whether the thing needs a fresh coat of paint, just a bit of touchup, or needs to be stripped down and recoated.

If you build all those other boats you may fidn that you have less wear and tear on each individual boat. As usage and wear decrease the interval between painting and repairs increases. With a fleet of three boats you may decide to schedule all the paint jobs for every other year, or even every third or fourth year. Consider using a common color scheme on your boats. For example: If you have a red boat with white trim, and a white boat with red trim, and a red-and-white boat, then you just need to buy red and white paints. If you paint them all at the same time you can buy a gallon of each color, and maybe save a few dollars, and a bit of time.
