I got good results with Interlux Brightsides 1-part paint, and didn't thin it --used it right out of the can. One tip that might help: you should only pour a little of the paint out at a time into a tray, and keep the lid on the main stash: this way you don't get so much evaporation and the paint doesn't thicken.
What worked for me was rolling the paint on using a thin epoxy roller (from West Marine), doing about a foot of the hull at a time, and then quickly tipping the bubbles off with a foam brush, then picking up the still-wet edge with the roller, etc. You need to work fast so it doesn't dry; and don't over-brush to cover up a drip or you'll mess up the whole area.
Another thing I did was pre-paint with Brightsides primer, 2 coats -- most of it gets sanded off but it might have helped the paint go on smoothly.
