I guess a cedar strip kayak could be called 'stick & glue' since it's made witha bunch of sticks...(actually the term is stitch-and-glue ;-)
The biggest difference is time. You can build a s&g in about 1/3 the time of a stripper, but a stripper will be more of a work of art since you've spent that much more time on it. For a first kayak, I'd recommend a s&g because you haven't invested a whole lot of time building when you go to do your first epoxy and fiberglass lay-up. If you screw up (major screw-ups aren't too likely) you haven't screwed up on a kayak that you've already spent 150 hours on. If you do go with a stripper first, then I'd strongly recommend testing out your technique on a cheap piece of plywood first before smearing epoxy all over the boat.
