Most hard-chined s&g boats are shallow v. So is the Guillemot. You could also try taking the lines off of your Isere and build your own custom-designed stripper.
If you go the "design your own boat" route, I'd suggest visiting the Canoe and Kayak Design BBS, especially if you're going to significantly deviate from a proven design.
