What has the temp been? If it's been cool, that's probably your answer. Since you already had a coat on the paddles that will seal the wood, you could build yourself a small curing oven out of cardboard or plastic sheet and a space heater or worklights. Get the temp up to 100 degrees or so and they should cure in a matter of a few hours. If they don't that's a good indication that you indeed mixed a bad batch of epoxy.
