From my experience as a woodworker, and not boatbuilder, I don't think that would be all that great of an idea. When you rip the 2x10 you will expose the inner wood to the atmosphere which will rapidly aclimate to the surrounding humidity. This will in all probability result in both pieces curling toward the new cut. If I were going to try it, I would rip equal amounts off both edges.
But, the framing lumber I buy in my area isn't straight and is so unstable you don't know what it's going to look like in a couple of days. One day it will be straight, and all of a sudden it will curl up.
