Try one at the Rendezvous, as Dale says.

How big are you? How tall? what weight? how big are your feet? what is your paddling skill level? daytrips, weekends, or multi-day?

Lots of questions to answer before asking which boat to build!!!

You could actually decrease tracking if you go to a longer, deeper, wider boat, and don't sink it into the water as much.
