Mariner kayaks are available with an adjustable sliding seat which allows you to vary the handling of the boat. There are technical papers on their web site that discuss this. Moving the sear rearward increases tracking, moving it forward increases manueverability. Their boats are designed specifically to take advantage of this, so it's possible that it won't make as much difference with a boat that's not.
