Check "Canoecraft" by Ted Moores, or the books by Gil Gilpatrick or David Hazen. You can get the complete titles of these books by searching amazon.com. If you can't find copies at your local library (and you might ask them to buy one or two for their collecion) or ask if they are available through any interlibrary loan program.
Paul is right about getting a book about how to build a canoe. I have "Canoecraft" by Ted Moores and it is a great book. I am sure that it will help you restore your canoe.
The easy way to figure out what components to replace/repair first, is the last thing you remove/strip from the boat should be the first thing to be replaced. So generically the removed order will be, thwarts, seats, outer gunwale, inner gunwales and then the decks. The inner gunwales and the decks may be reversed depending on how they were installed, for example if the inner gunwales go all the way to the tips of the canoe then remove the decks first. You then will reinstall (when the time comes) in the opposite order. Keep the original gunwales and decks, as they will work for templates for constructing new ones. Drill out the rivets or cut them off, when you put on the replacements use brass or stainless steel screws.
I don't want to comment about the hull until I know if it is plastic or a wood.
