Don't know about exact drying time, but, it will probably take a couple of weeks or more, even dried in strips. I agree with your plan to cut thick, and a pinch wide. When you cut green lumber, be prepared for it to bend a little, or twist. Solution to that would be to sticker it and block it from the sides every few feet. Cut a few short( 1"-2" ) pieces and space them a foot apart or so, and between each layer. Put a brick or something on each side to contain any bending. Place a couple of bricks on top, every couple of feet to help prevent warpage. Just space it and let it air out evenly. Your guess is as good as mine as to length of time or moisture %.

Can't help you with price as I'm not familier with Northern White Cedar, but, $1 bd.' seems pretty reasonable for any wood that is Premium material. So, tell me, did you move up to Maine just for the N.W.C,?? That's bold !! Hope that drying works out for you.
