I'd leave it alone at this point. When you apply resin and the glass cloth the resin will soak into the remaining raw wood and change its color. Hopefully it will match what you already have. Otherwise, the slignt differences in coloration will be a nice enhancement, much as the differences in color in wood grain enhances the beauty of the wood.
The epoxy you applied is very easily absorbed by the wood. It you try to sand off all the areas where the epoxy has soaked in I'm afraid you will sand right through.
Get things smooth and finish the resin and cloth work. Don't get too hung up on the looks at this stage. It will be beautiful when you are done.
