As to the first part of your question, I believe the Guillemot has more rocker and should be more maneuverable if you're into playing in the surf. Chris Cunningham based the kayak in Sea Kayaker on his skin-on-frame kayaks, but took out some rocker for better tracking and flattened the center of the hull a bit for better initial stability. Chris' design includes plans for a skeg (see Ross' page for in-process pictures.) From what I've seen, about half of the builders have foregone the skeg and said that it tracks very nicely, and those who have the skeg only need to lower it an inch or so to track like a train. A couple of those who have gone with the skeg were lighter weight paddlers (~130-150#), and the skeg helped counteract the fact that there is more 'freeboard' (boat above water) for the wind to push against. The same skeg could be added to the Guillemot, and would probably be adviseable due to the greater rocker of its hull.
Also, the Guillemot is reported to be a difficult stitcher to build due to the torturing at the ends.
