If you do decide to go the carve your own from minicell route, check back in on the board. There is an excellent article on the Raleigh cycle and kayak home page, it's a fairly detailed step by step method for carving your seat and improving the fit of your cockpit. I don't have their wesite address handy but if you want it let me know and I'll look it up and post it.
