Don't feel bad I get the exact same problem no matter the temperature/humidity. When I am ready to put the next coat of varnish on I skim the "Jell-O" off. Then after stirring the varnish I strain the varnish into another container that I use for applying the varnish. It seams to work and this way I don't through out to much.

I have wondered if there was a way to create a vacuum in the can to remove the air (assuming the air is the problem).

I would also like to here what other people have done to eliminate this problem
