How long till I can varnish

The epoxy on the hull has been on for about 5 days but I have put some epoxy on smaller areas of trim etc, 1 day ago. My question is can I varnish as soon as the epoxy is sanding nicely.

What is the technical reason to wait for a week or two before varnishing. I'm kind of in a hurry and need to know what could happen from applying the varnish too early.

How dry does each coat of varnish have to be before one can recoat? Does it have to be sanded between each and every coat or only if it looks funky?
