Another quick build option is to start looking for a surf-ski. I completed one of these while living in Florida in about a month. Somewhat like making a very long surf board and if you live near good surf a lot more fun than a surf board. Best part is you can have the foam shaped and glassed in a short time and have a very nice sit-on-top ready before the water gets too cold.

I haven't looked into kits for these for a long time, but I know that they are out there.
