The purpose for holding the shoulder of the paddle is to help you maintain the proper angle on the blades. According to an article in Sea Kayaker about Maligiaq Padilla (Greenland kayak champion), the blades should be tipped forward at the top edge (~40 degrees), for maximum efficiency. It would seem that this would be hard to do if you only held the loom.
