If your deck is already trimmed, here's what I would offer: I think I would still use strapping tape to align the deck and hull. I liked the way that system worked on both my Pygmy stitcher and my stripper. It forces you to inspect the entire seam as you go; push a little here, pull a little there, lock it down with tape... Given the elastic you have, I would probably tape every 6" or 8", then wrap with the elastic.
If your deck has been stripped oversized and you plan on trimming the excess (as with the plywood deck): I would start with a couple of roof-rack-style nylon webbing straps at the 1/3-way and 2/3-way point, check that everything is still square and that there's no twist in the kayak, then mummify the sucker.
