One friend built a Pygmy Coho kit outside in autumn, here in Sydney. Temperatures are about what you might expect in "fall" in southern US states.
He pulled a tarp over the boat whenever it looked like rain and as soon as each layer of epoxy was no longer tacky.
There was only one incident of note: an unexpected rain shower started just as he finished wetting out the glass on the hull. He decided, as soon as he saw the raindrops pooling on the surface of the glass, that it had to come off, so he quickly pulled the glass back off and sqeegeed off all the epoxy that he could. You wouldn't know it had ever happened.
It was a great success. He has a high level of trade skills and is used to doing his work out of doors.
There is also a web site out there somewhere, which shows several skin-on-frame baidarkas being built in a camp ground, somewhere in the US.
It is feasible.
