Hi Scott, I have built three boats in the last year, the first was C&B the second was a little of both (C&B and rolling bevel) the last boat was all rolling bevel. I think the C&B is a little easier for a first timer but once you get use to beveling a strip and fitting it to the adjacent strip it works out better. I found that more intricate patterns can be obtained without C&B and that the final outcome is a boat that has less planing and sanding. I agree with Spidey that the inside is more difficult to get good joints, but it's easy to fill them.
