I would think you might have problems trying to make the steam-bent wood conform to the interior edge of the cockpit opening even with the spreaders. But assuming you could get past that, it sounds doable.

The Laughing Loon method uses many clamps to hold the laminations to the form. You build two half-cockpit pieces that are then fitted along the centerline. The photo is the mold I used for the cockpit lip on my Guillemot, but the glue-up for the vertical coaming on my Panache was very similar.
