I often put one boat in the middle then the other two on either side leaning on the middle boat. I use two sets of saddles. The center pair is set up to hold the center boat and the other pair set up on the ends of the bar facing inward to hold one edge of each kayak. A pad between the center boat and the boats leaning on it might be in order, but with plastic boats it probably isn't necessary.
