Number 10 cotton duck, or #10 duck is not 10 ounce fabric, it is closer to 15 ounce per square yard. #10 duck is a fairly stiff cloth with an abrasion-resistant weave, that is also fairly pucture resistant.

Denim is a weave for clothing, so it is soft. Jeans have to bend, so you can get your legs in!
