I was trading emails with a gentleman, from somewhere in California, who was also building an Alaska Recovery kayak. He mentioned that he found the appropriate weight canvas in a Wal-Mart (or Something-Mart...) store for about US$ 4 per yard. It was 60" width. I was pretty envious, as I paid nearly double that for a 90cm width here in Japan!
