I thik it would work fine. With a deck ridge, a kayak would be stiffer than an open canoe. The only problen I see is that you would need to skin the hull and deck seperatly instead of wrapping a single piece of fabric around the boat. This is because the process of shrinking the skin actually compresses the frame, which loosens the Kevlar bracing. You need to be able to re-tighten this bracing after the hull is shrunk. You would then have to devise a way to glue the deck skin to the gunnels without un-gluing the hull skin, (a type of hot melt glue is used)but I think it could be done.

Come to think of it, Monfort offers a kayak design. For what he charges, you'd be way ahead to buy his plans and get a jump on the learning curve.
