Thanks to everyone for the feedback. After talking it over with a my next door neighbor (you have to love it when your next door neighbor moves in with four kayaks and a canoe) I have decided to go with a conventional bulkhead & hatch in the stern for the all important cooler access. In the bow I'll use a minicell bulkhead with a deck plate. Fortunately, I salvaged a 24" x 36" x 3" piece of minicell that was being thrown out. Plenty of material for a bulkhead and a few attempts at a good seat!
