How about a Dyson Baidarka. The design calls for aluminum tubing and recycled stop signs, so I think PVC pipes and sign stock or plywood would work. Use recycled painters tarps for the skin. Plans for the double are in the back of his book. Also baidarkas are faster than greenland (putz) style.
