Shawn Baker stretched the length of the Guillemot (check his website) with good performance results, but I don't think he changed the beam.
I'm merely a rookie, but I suspect if you expanded the beam that much, you might alter the performance in ways you didn't intend. Why not build a boat that's designed with a wider beam to start with?
