One reason for sanding between coats is so that you can see the difference when you apply the next coat. If you are adding more varnish over an already shiny surface it can be really difficult to tell where you have been. Varnish does not need sanding to get a good bond as long as the existing coat is clean and not too old.

I have an inexpensive (Wagner) HVLP sprayer which works fairly well. There is a learning curve to spraying. I have had a problem with orange peel. This can be reduced by thinning, but that can cause sags and drips and slows down the drying so dust is a bigger issue.
