I think most epoxies, at least system 3, west, and MAS fully cure in about 2 weeks at 72 degrees f. But hey, a lot of us have put them in the water before that, you will sand it again before starting to varnish anyway, and a few visits to the water in the sun want hurt in my book. I say go get it wet, it is a lot easier to fix the boat than to fix you if you bust!
