Besides the weight (high) and the difficulties the hardness might present in machining, oak is dimensionally pretty unstable in the present of moisture. It will expand a LOT more than you would expect. It will also turn black in the presence of moisture which if finished bright, it will not look very nice. On top of all this, oak has a reputation for being hard to glue.
If you want to try it anyway, white oak is MUCH better in all the above the RED oak. Red oak is out of the question as a boat building material as far as I am concerned.
