This is getting complicated. It didn't look complicated on his kayak. He used 2 fasteners with pins per hatch, one on each side. The pin went through the hatch cover (must have been towards the edge - outside the seal - so it was waterproof) By turning the pin a quarter turn, it hooked into a little receptacle with a small wire that was screwed into the deck, next to the hatch, but under the hatch cover. I will try to draw what I remember (this may not even be right!)
