Like Shawn said, it does not really matter where or how you start stripping. The goal is to cover the forms with wood. The choice is primarily aesthetic.

If the Veritas tool is a scraper, it is probably not a good choice for make coves and beads on cedar. Cedar will tend to tear. These tools are intended for hardwoods.
