Better you found out in the driveway than out on the water! I had similar problems with the cardboard dams when I was building a Coho, only I did the pours before joining the deck to the hull. That way I knew where the pours were to drill through the center. When I attached the deck, I filled the remaining pocket the traditional way (putting the boat up on end).
If I found myself in your situation, I would probably see if I could find a piece of pipe (copper or PVC) which would fit inside what you already drilled, then add more epoxy to the pour. That way your don't have to worry about going through exactly the same path with the drill bit when you redrill the whole. I would also wrap some wax paper or plastic wrap around the pipe to be sure that you can pull it out once the pour has dried. Just a thought...
