Right.
Its also going to be more difficult to work with such a narrow strip. The weight savings over cedar strip will be non existent.

remember, a stripped boat is a composite sandwich the strength doesn't necessarily come from the cedar, but instead, encapsulating the cedar between 2 layers of fiberglass and resin. Unless you're trying to make a ballistic proof boat, (a composite sandwiched composite) there's no positive reason to strip with plywood.

There is a good alternative if your heart is really set on it. Glued Lapstrake or Plylapstrake. This is becoming a common method of building canoes. It takes advantage of plywood’s weight/strength advantages.
