One trick to keep in mind gives you the upside of cold-cure epoxy without the downside of blush. Premix about 1/3 of the required hardener into the resin, and let it "sweat in" for 5 or 10 minutes, to get the reaction ramped up but not out of control. Then add the remainder of the hardener, mix thoroughly, and have at it. Some experimentation will tell you what the exact ratio and time ought to be for your conditions.
Another tip is to turn off the heat after epoxy application. This will prevent outgassing of air bubbles from the wood, which has driven some builders to distraction.
