I've watched a lot of kayaks sell for a pretty penny on Ebay.
Several observations from previous sales.
1. Include a picture, or better yet several pictures (including closeups if you did a good job)!
2. If you don't want to try to mail it, just put in the ad that you will deliver to within xxx (maybe 100 or so) miles from wherever you live and will not send it.
3. Do not start high. They usually don't get any bids. Start out low and put a reserve price on it so that it won't sell unless you get the minimum that you want for it. The emotions of the people bidding will bring the price up where you want it.
4. Sell in the spring. These things sell better when people are getting the urge to go paddling.
5. If you are going to deliver or have them pick it up, then have them bring a cashiers check so you know the check won't bounce.
6. Take the money and buy supplies to build more kayaks.
Here's a recent one that I don't think sold that high, but then again it is Fall.

I have seen cedar strip kayaks sell for as much as $3100 + $150 for shipping.
