I,ve built an all redwood canoe. The wood is stiffer and more brittle than cedar. Do to the stiffness some curves on the kayak may be a challenge. Weight might be a touch heavier. It is also a little harder to sand, use sharp sandpaper. Redwood creates a craft that is quite dark in color, hence it heats up a lot in the sun. This is not a problem other than it is hot to the touch sometimes.
