: I'm 5'11, 220 lbs and do have some experience in canoes. The guillomet double
: seems a bit wide. are there many others.

The guillimot double is a kayak for persons so that is why it is fairly wide. lots of volume for all the weight. it is not more wide than any commercial designs out there.

there are plenty of other strip kayak designers:

http://www.redfishkayak.com/
http://www.laughingloon.com/kayaks.html
http://www.shearwater-boats.com/forhome.html

I am just starting on a redfish Return for my fall/winter/spring project.

PS. There is a book called Kayakcraft with a number of designs in it as well.

good luck choosing!!!
