The two big differences between the companies is the scarfed (CLC) vs. butt joints (Pygmy), which I think is a wash, certainly not much difference in time, and the decking, rounded (CLC) vs angled (Pygmy) which probably does make a difference. The rounded CLC deck needs to be bent around the deck braces, tacked into place and then the edges cut, this should be the only "shaving and sawing" part. The Pygmy deck is just another S&G layer.
There have been questions about the strength of the CLC decks, maybe true on some boats, but not all, but I like the design of the Pygmy decks better. YMMV.
I originally liked the cambered deck of the CLC's better, but now like the Pygmy's -- go figure
