Hi Jenny. I built my wife (5'3" - 120) a Ch. 16. She loves the boat and finds it very stable. I built the regular one because it's for touring, but the LT is same below the water line so should have the same stability. I photograph from my older Cape Charles 17 without much worry of the stability (which seems a little less than the Ch. 16), the biggest problem is accessing gear in the cockpit. So my advice? If your main purpose is to photograph, a boat like the Mill Creek would be a better choice. If it's to paddle and occasionally take pictures, go for the 16 LT and get good and comfortable in it before taking out the camera.
