I am a model builder as well as a kayak builder. I havn't tried a stripper as a model but here is a way you could do it. It is based on the fact that Some glues are soluble in Acetone and others not effected.
Glue the strips to the forms with a glue such as Duco-Cement and to eachother with carpenter's glue as we do with ull size strippers. when you have finished stripping the hull, gently sand it smooth and 'glass it with epoxy and really fine (1oz. satin weave) glass. when all the epoxy has cured, you can use acetone to desolve the Duco-Cementleaving the inside of the hull smooth and ready to sand and glass.
Pin the strips against the previous one by placing the pin against the side rather than through the strip. Use Masking tape etc rather than pins where possible.
